OAT BRAN BANANA CAKE 
Vegetable cooking spray
1 1/2 c. plus 1 tbsp. all purpose flour, divided
1 c. pitted dates, chopped
1/3 c. firmly packed brown sugar
1/4 c. butter, softened
1 c. mashed ripe banana (about 2 med.)
3/4 c. frozen egg substitute, thawed
1/2 c. water
1 tsp. vanilla extract
1 1/2 c. oat bran
2 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
2 tbsp. chopped walnuts

Coat bottom and sides of a 13 x 9 x 2 inch baking pan with cooking spray; dust with 2 teaspoons flour, and set aside. Toss dates with 1 teaspoon flour; set aside.

Cream sugar and butter at medium speed of an electric mixer until fluffy. Add banana; beat well. Stir in egg substitute, water and vanilla.

Combine 1 1/2 cups flour, oat bran, and next 3 ingredients. Add to banana mixture, beating at low speed until smooth; stir in dates.

Pour batter into prepared pan; sprinkle with walnuts. Bake at 350 degrees for 25 minutes or until a wooden pick inserted in center comes out clean. Cool completely on a wire rack.
