BANANA - OAT - CINNAMON BARS | |
2 c. oat flour (or all-purpose flour) 1/2 c. rolled oats 1/4 tsp. salt 3 1/2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. cinnamon 1/2 tsp. nutmeg Generous 3/4 c. mashed bananas 4 tbsp. oat flour 3 tbsp. vegetable oil 4 tbsp. water Preheat oven to 350 degrees. Oil 9 x 2 inch pan. In a large bowl, and using a fork, stir together flour, oats, salt, baking powder, baking soda, cinnamon and nutmeg. In a medium size bowl, combine banana, 4 tablespoons flour, oil and water. Beat with a hand-operated mechanical beater until well mixed. Add banana mixture to flour mixture and stir quickly 28 to 30 beats. Pour into pan. Bake 30 to 35 minutes. Let cool and cut into 9 bars. Makes 9 bars. |
