POTATO STUFFING 
6 slices bacon
1/2 c. chopped onion
1 c. chopped celery
4 c. hot fluffy mashed potatoes
1 c. toasted bread crumbs
2 tsp. salt
1/2 tsp. sage leaves
Freshly ground black pepper to taste
1 egg, beaten

Cook bacon until crisp, then crumble. In 1/4 cup drippings (or corn oil), saute onion and celery until soft. Combine all ingredients and mix well. Put in shallow 1 1/2 quart baking dish. Bake at 350 degrees for 30 minutes. It may be topped with uncooked bacon before baking.
