MEAT AND POTATOES PIE 
3 1/4 tbsp. vegetable oil
3 c. coarsely shredded raw potato
1 c. grated Cheddar cheese
3/4 c. cooked diced chicken
1/2 c. chopped onion
1 c. evaporated milk
2 eggs
1/2 tsp. salt
1/4 tsp. pepper
3/4 tbsp. fresh basil
1/2 tbsp. sage

Preheat oven to 425 degrees; stir together oil and potato. Press evenly into a 9 inch pie pan. Bake at 425 degrees for 15 minutes until just beginning to brown. Remove from oven. Layer in potato pie shell the next 3 ingredients.

In a bowl beat together the remaining ingredients and pour mixture onto other ingredients. Sprinkle with paprika and parsley flakes (optional). Return to oven and bake at 425 degrees for 30 minutes or until lightly browned and cool 5 minutes before serving.
