BASIC WAFFLE BATTER 
2 1/2 cups all-purpose flour
1 tsp. salt
2 tbsp. baking powder
1 tbsp. cornstarch
2 tbsp. sugar
2 eggs
2 cups milk
1/3 cup butter, melted
2 tsp. vanilla

Preheat your waffle iron.

In a bowl, combine dry ingredients. In a separate bowl, beat eggs, then beat in milk. Beat in melted butter and vanilla.

Mix together wet and dry ingredients just until smooth; small lumps can remain. Do not over-mix to avoid tough waffles.

Pour batter onto hot waffle iron sprayed with non-stick spray or brushed with melted shortening. Bake each waffle for about 2 1/2 minutes or until golden brown and cooked through.
