ELSA'S CARROTS 
6-8 carrots
1/4 c. water in which carrots are cooked
2 tbsp. grated onion
2 tbsp. horseradish
1/2 c. mayonnaise
1/2 tsp. salt
1/8 tsp. pepper
1/4 c. bread crumbs
1 tbsp. butter, melted
Paprika to taste

Peel carrots, cut lengthwise and cook in boiling water until just tender. Drain, saving 1/4 cup of water. Place carrots in baking dish.

Mix reserved water, onion, horseradish, mayonnaise, salt and pepper. Pour over carrots. Mix crumbs, melted butter and paprika. Sprinkle over top. Bake uncovered for 15-20 minutes in 375 degree oven. Serves 4.
