SQUASH CASSEROLE 
4-5 c. cooked squash
1/2 c. chopped onion
1/2 c. chopped bell pepper
1 1/2 c. shredded Cheddar
2 eggs
1 c. mayonnaise
1 can thinly sliced water chestnuts
Salt and pepper
Buttered bread crumbs to cover

Boil squash, onion and peppers until done, drain. Add rest of ingredients, except bread crumbs. Mix well. Cover with bread crumbs. Bake 35 to 40 minutes in 400 degree oven.
