SWEET POTATO SOUFFLE 
4 c. or 2 cans yams
2 lg. eggs
1 c. dark brown sugar
1 tsp. cinnamon
1 tsp. vanilla
3 tbsp. butter
1 tbsp. lemon juice
1/2 box raisins
1/4 c. milk, added for consistency

Drain liquid from yams and save to add for consistency. Mix all ingredients thoroughly saving raisins for last. Mixture should be smooth and almost runny. Use more milk or drained liquid for consistency. Bake 350 degrees for about 45 minutes. Top with marshmallows and brown.
