SWEET POTATO SOUFFLE 
4 c. sweet potatoes, cooked & peeled
2 eggs
1 c. sugar
1 tsp. vanilla
1/2 stick butter, melted

TOPPING:

1 c. brown sugar
2/3 stick butter, softened
1/2 c. self-rising flour
1 c. chopped nuts

Preheat oven to 450 degrees. Mix sweet potatoes, eggs, sugar, vanilla and melted butter. Pour into a 9 x 12 inch glass baking dish. Bake at 450 degrees for 30 minutes.

Mix brown sugar, softened butter, flour and nuts with a fork. Sprinkle over potatoes. Brown about 10 minutes. Serves 6. Can be doubled or tripled for a large crowd.
