NORAH'S SWEET POTATO SOUFFLE 
3 c. cooked, mashed sweet potato
1 c. sugar
2 eggs
1/2 c. milk
1 tsp. vanilla
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
1 c. brown sugar
1/2 c. flour
1 c. chopped pecans
1/4 c. butter

Combine sweet potatoes, sugar, eggs, milk and vanilla. Mix well. Pour into buttered casserole. Combine brown sugar, flour, pecans and soft butter. Spread over potatoes. Bake at 400 degrees for 30-40 minutes.
