SEAFOOD CASSEROLE OR STUFFED
PEPPERS
 
1 lb. sm. or popcorn shrimp (fresh or frozen)
1/2 c. chopped celery
2 c. chopped onions
1/2 lb. butter
1 lb. crab meat or imitation krab meat
2 c. cooked rice
2 tbsp. tomato paste
Salt, black or red pepper to taste
1 c. toasted bread crumbs or crushed potato chips
1/2 c. chopped bell pepper in casserole (optional)

Melt butter; add onions, celery and tomato paste. Cook until onions wilt, add shrimp and cook until tender. Add rice, crab (krab) meat and seasonings. Stuff peppers split in half lengthwise or place in casserole sprayed with non-stick cooking spray. Sprinkle with bread or chip crumbs. Dot lightly with butter if using bread. Bake at 350 degrees for 15-20 minutes.
