BEEF & RICE CASSEROLE OR SWEET
PEPPER STUFFING
 
1 lb. ground beef
1 c. uncooked rice
1 can cream of mushroom, undiluted
1 onion
1/2 or 1 sweet pepper
1 can (15 oz.) Spanish tomato sauce

Cook 1 cup rice in 2 cups water. Bring water to boil, salt. Add rice, cook 15 minutes on simmer with lid on pot. Cook beef, onions, sweet pepper together until brown. Add rice, tomato sauce, cream of mushroom and stir well. Put in 2 quart Pyrex baking dish. Bake 20 minutes at 350 degrees.
