KETTLE GOULASH | |
2 tbsp. oil 1 c. chopped onions 1/2 tsp. finely chopped garlic 3 tbsp. sweet Hungarian paprika 2 lbs. shin beef, cut into 1 1/2 inch cubes 1/2 tsp. caraway seeds 4 cups chicken or beef stock or water 1/2 tsp. salt Freshly ground black pepper 2 med. sized boiling potatoes 1 lb. finely chopped tomatoes, (1 1/2 cups) 2 green peppers, finely chopped 1/2 tsp. marjoram Heat oil in large saucepan, and cook onions and garlic until lightly colored. Take off the heat and stir in the paprika. Add beef cubes, caraway seeds, stock or water, and pepper and salt. Bring it to a boil and simmer for about an hour, until beef is almost tender. Parboil potatoes until almost done, peel, cube and add to beef. Add tomatoes, peppers, and marjoram to the pan. Cook until beef and potatoes are done. Serve in deep individual plates. Makes 6 servings. |
