KETTLE MORAINE POTATO SALAD | |
6 lg. potatoes, boiled in jackets, peeled when cool & diced 2 carrots, chopped or minced 10 sm. radishes, chopped or minced 1 bunch scallions, chopped (or 1 onion, chopped) 3 stalks celery, diced 6 slices crisp bacon, cooked, crumbled fine, add last 1 c. mayonnaise 2 tbsp. vinegar 1 tsp. salt 2 tsp. parsley (dried or fresh), chopped 1/2 tsp. thyme Pepper to taste 1/2 tsp. celery salad Mix together mayonnaise, vinegar and spices like a dressing. Can make ahead and refrigerate until needed. Combine all other ingredients. Add dressing and bacon. Even better the next day. Makes about 2 quarts of very special potato salad. |
