BASIC CHEESE SAUCE 
2 c. (1 lb.) low fat cottage cheese
2 tbsp. lemon juice
1/4 c. skim milk

Place all ingredients in a blender jar. Blend until creamy, adjusting the milk measure to produce the desired consistency.

Variations:

Blue Cheese: To 1 cup basic cheese sauce add 1-2 tablespoons of blue cheese and 1/4 teaspoon of Worcestershire sauce. Chill for a few hours or overnight to allow flavors to blend. Excellent as a stuffing for celery.

Onion: To 1 cup basic cheese sauce add 2 teaspoons dry onion soup mix, 1 teaspoon finely chopped green onion. Mix and serve chilled.

Use the basic recipe with variations as a dip, a spread, a salad dressing, or a delicious replacement for sour cream.
