SHORTCUT LASAGNA 
1 tbsp. vegetable oil
1 1/2 lbs. ground chuck
2 (8 oz.) cans tomato sauce
2 envelopes spaghetti sauce
2 (12 oz.) cans V-8
1 (1 lb.) pkg. lasagna noodles
2 (12 oz.) cartons cottage cheese
1 (8 oz.) pkg. Mozzarella cheese, shredded
1/4 c. grated Parmesan cheese

Brown ground chuck in oil. Stir in tomato sauce, sauce mix, and V-8. Bring to a boil, lower heat and simmer 10 minutes. Cover the bottom of an oiled 9 x 13 x 2 inch baking dish with a thin layer of meat sauce. Then add a layer of uncooked noodles, cottage cheese and Mozzarella cheese. Repeat until all ingredients are used, ending with the meat sauce. Cover pan tightly with heavy foil. Set on a jelly roll pan. Bake in a moderate oven at 350 degrees for 1 hour. Let stand 15 minutes. Sprinkle with Parmesan cheese and chopped parsley. Cut into squares to serve. Can be frozen before baking if you like.
