DADDY CASSEROLE 
1 cup uncooked rice
1 cup canned whole kernel corn drained
Salt and pepper to taste
2 cans tomato soup
1/2 c. finely chopped onion
1/2 c. fresh or frozen peas
3/4 lb. ground beef browned
1/2 lb. bacon, fried crisp and crumbled
Water

Place rice and corn in layers in casserole (1 1/2 quarts) sprinkle with salt and pepper. Pour over 1 can tomato soup and 1/4 can water. Add layer of onion and peas, then layer of meat. Again sprinkle with salt and pepper. Pour over second can of soup and 1/4 can water. Cover with bacon. Bake covered for 1 hour at 350 degrees then remove cover and bake 30 minutes more. I sometimes add extra ground beef for a more meaty casserole. Other ingredients can also be varied.
