Boil for three minutes: 2 c. raisins 1/2 c. oil 1 1/4 c. water 1/2 tsp. nutmeg 2 tsp. cinnamon In large bowl add: 2 c. flour 1/2 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 6 pkgs. sweet and low 2 eggs 1 tsp. vanilla 1 c. chopped nuts, optional Add cooled raisin mixture to dry ingredients. Mix by hand ONLY (not mixer) until all flour is absorbed. Drop by spoonfuls on cookie sheet (do not press down). Bake at 350 degrees for 10 minutes. Makes 2 dozen without nuts, 3 dozen with nuts. DIETITIAN'S NOTE: Sounds delicious! By omitting the nuts and using 1/2 cup egg substitute, the fat content and calories will drop further. |
