BAKED CHICKEN BREASTS 
4-6 deboned chicken breasts
1/2 c. bread crumbs
1/2 c. grated Parmesan cheese
1/2 tsp. salt (or less)
1 egg, beaten
2 tsp. oil
1 c. grated Cheddar cheese
Optional herbs: thyme, basil, marjoram, oregano, garlic powder or parsley

Skin and debone chicken. Combine bread crumbs, Parmesan cheese, salt and any optional herbs you desire. Beat egg and oil in a bowl. Dip chicken in egg, then bread crumbs. Bake at 375 degrees for 15-20 minutes, on a cookie sheet, until tender and slightly browned. Sprinkle with Cheddar cheese and bake 2 minutes or so to melt cheese. Try substituting Romano or grated Swiss cheese for the Parmesan, and Monterey Jack for the Cheddar.
