QUICK AND EASY CHEESY ZUCCHINI 
olive oil
1 zucchini, sliced
1 summer squash, sliced
3 plum tomatoes, chopped
1/3 cup shredded cheese
Italian seasoning, to taste (McCormick)
ground red pepper flakes, to taste

Slice zucchini and summer squash into thin rings.

In a skillet, sauté zucchini and squash in olive oil for 8 to 10 minutes, or until nearly tender. Add Italian seasoning, red pepper flakes, and tomatoes. Continue to sauté until squash is tender and tomatoes are cooked. Do not drain liquid. Add shredded cheese and stir through until melted.

Serve immediately.

Serves 4.
