ZUCCHINI, BANANA, WALNUT, AND
CHOCOLATE CAKE
 
3/4 c. shortening
2 eggs
1 tsp. baking powder
1 1/2 c. buttermilk
1/2 c. cocoa
2 ripe bananas, mashed
1/2 tsp. salt
2 c. sugar
2 tsp. baking soda
2 tsp. vanilla
2 1/2 c. flour
1 c. walnuts
2 c. zucchini, grated

ICING:

1 c. sugar
1/3 c. butter
1/4 c. cocoa
1/4 c. milk

Cream sugar and shortening. Add eggs and beat for 30 seconds to 1 minute. Combine dry ingredients and add alternately with buttermilk, 1/3 at a time. Add vanilla. Mix in fruits and nuts. Pour into a 9 x 13 inch pan. Bake at 350 degrees for about 1 hour or until center bounces back when touched. Ice while hot.

Icing: Bring icing ingredients to a boil and boil for 1 minute. Ice cake while hot.
