ZUCCHINI CHOCOLATE CAKE 
2 c. shredded raw zucchini, not peeled
3 eggs
1/2 c. oil
2 c. sugar
3/4 c. buttermilk
1 tsp. grated orange peel
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 c. cocoa
1 tsp. vanilla
1 c. chopped nuts

Beat eggs until light. Gradually beat in sugar until very fluffy. Slowly add oil, beating well. Add buttermilk and zucchini. Combine dry ingredients and mix on low speed. Add vanilla, orange peel and nuts. Grease and flour 9 x 12 inch or two 9 inch pans or a Bundt pan. Bake for 40-50 minutes at 350 degrees.

FROSTING:

3 oz. cream cheese
1/4 c. butter
1 tsp. vanilla
2 c. powdered sugar

Beat together.
