MARINATED VEGETABLE PLATTER 
1/2 head cauliflower, broken into flowerets
4 carrots, sliced
1 stalk celery, cut into 2" sticks
1/2 green pepper, cut 1/4" square
1/4 c. white vinegar
1/2 c. cooking oil
1/4 c. water
2 tbsp. sugar
1 tsp. salt
1/2 tsp. dried whole oregano, crushed

Place first 4 ingredients in bowl and set aside. Combine vinegar and remaining ingredients in saucepan; cook over medium heat, stirring constantly until mixture boils. Pour over vegetables. Toss gently, cover and chill at least 8 hours. Drain vegetables and serve on a lettuce lined platter.
