CREAMY CLAM CHOWDER | |
1 lb. bacon 3 sm. onions, chopped 4 stalks celery, sliced 4 potatoes, chopped 6 cans minced clams 5 tbsp. flour 2 c. milk 1 pt. half and half 1 sm. bottle of hot sauce 3 tbsp. butter Salt Pepper Cook and remove bacon from grease. Save enough bacon grease to cover bottom of frying pan. Crumble bacon into crockpot or Dutch oven. Open clams and SAVE and set aside the juice. Put clams in with bacon. In the frying pan (with bacon grease) add onions, celery, potatoes and clam juice. Cook 15 minutes on medium high. Empty into crockpot or Dutch oven. Make a paste of flour and some milk. Add to clam mixture along with half and half and the rest of the milk. Add bottle of hot sauce, butter and salt and pepper to taste. We use the whole bottle of hot sauce. If you like cooler chowder just add hot sauce to taste. Cook on high in crockpot or simmer in Dutch oven for 1 hour. |
