CHICKEN STRATA 
16 slices day old bread
4 c. diced, cooked chicken
1 c. onion, chopped
1 c. green pepper, chopped
1 c. mayonnaise
3 beaten eggs
3 c. milk
2 cans cream of mushroom soup
1 c. shredded cheese
1 1/2 tsp. salt
Dash pepper

Dry out bread slightly in oven. Butter 4 slices, cut in 1/2 inch cubes and set aside. Cut remaining bread in 1 inch cubes; place half bread cubes in greased 9x13 pan.

Combine chicken, vegetables, mayonnaise and seasonings. Spoon over bread cubes. Sprinkle remaining unbuttered cubes over chicken mixture.

Combine eggs and milk; pour over all. Cover and chill 1 hour or overnight. Spoon soup over top. Sprinkle with buttered bread cubes. Bake in slow oven 325 degrees for 60 minutes. Sprinkle with cheese during last few minutes of baking.

This was my favorite dinner growing up! Made it today and it tastes just like I remember. Poached some chicken breasts, and used celery instead of green pepper since it's what I had. Made with homemade challah bread, and honestly couldn't tell the difference with store bought. Give it a try! Yummmy!
