CHICKEN STRATA 
9 slices day old bread
3 c. cubed cooked chicken
3/4 c. chopped onion
3/4 c. finely chopped celery
38 c. chopped green pepper
3/4 c. mayonnaise
1 1/8 tsp. salt
Dash of black pepper
3 slightly beaten eggs
2 1/4 c. milk
2 (10 1/2 oz.) cans cream of mushroom soup
3/4 c. shredded American cheese

Butter 3 slices bread; cut into 1/2 inch cubes and set aside. Cut remaining bread into 1-inch cubes.

Mix together chicken or turkey, onion, celery, green pepper, mayonnaise, salt, and pepper. Put mix in baking dish and cover with the unbuttered cubes.

Combine eggs and milk; pour over all. Cover and chill, 1 hour or overnight. Spoon soup over top. Sprinkle with buttered crumbs. Bake at 325 degrees for 60 minutes or until set. Sprinkle cheese over during last few minutes. Let stand few minutes before serving. Serves 9.
