LEMON SQUARES 
Easy - From Cake Mix

CRUST:

1 pkg. lemon cake mix
1/3 c. butter, softened
1 egg

Mix crust ingredients with pastry blender. Pat into 11 x 13 inch pan. Reserve one cup of mixture for topping. Bake crust at 350 degrees for 12 to 15 minutes.

FILLING:

2 eggs
1 c. sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 tsp. lemon peel
1/4 c. lemon juice

Mix filling ingredients in mixer. Pour over HOT crust. Top with reserved crust mixture. Bake at 350 degrees for 12 to 15 minutes or until light brown and puffy. Sprinkle with confectioners sugar. Cool completely and cut into squares.
