ZUCCHINI PANCAKES 
3 c. coarsely grated zucchini
1 egg
salt and pepper, to taste
1/2 c. all-purpose flour
1 tsp. baking powder
melted butter
Parmesan cheese

In a bowl, combine zucchini with egg and salt and pepper. Sift flour and baking powder over zucchini mixture and mix ingredients thoroughly.

Drop mix by 1/4 cupfuls on lightly oiled griddle. Cook pancakes until brown on both sides. Serve hot with melted butter and Parmesan cheese.

Makes 8 to 10 pancakes.
