CRISP ROASTED POTATOES 
2 lb. potatoes, quartered or eighths
1 env. onion or onion mushroom soup mix
1/2 c. olive or vegetable oil
1/4 c. butter, melted
1 tsp. thyme, optional
1 tsp. marjoram, optional
Pepper

Preheat oven to 450 degrees. In shallow baking pan, blend all ingredients except potatoes. Add potatoes and turn to coat thoroughly. Bake, stirring 2-3 times or until potatoes are tender. Garnish with chopped parsley. Serves 8.
