NASHVILLE HOUSE FRIED BISCUITS 
3 pkg. dry yeast
1/2 c. lukewarm water
1/2 c. shortening
1 qt. milk
1/2 c. sugar
6 tsp. salt
7 to 9 c. flour
Hot oil for frying

Dissolve yeast in lukewarm water. Stir in shortening. Add milk, sugar, salt and enough flour to make a workable dough. Knead batter until dough is mixed and smooth. Cover and let rise in a warm place until about double in bulk. Punch down and roll; cut in circles for biscuits or pull off a piece of the dough and stretch and pat into biscuits.

Drop into hot oil and fry until golden on one side. Turn and cook the other side. Drain biscuits on absorbent paper and serve hot. Makes about 7 dozen.
