CHEDDAR BISCUITS WITH FRIED EGGS
AND HAM
 
1/4 cup flour
1/2 tsp. baking powder
2 tbsp. cold butter
pinch of salt
2/3 cups grated sharp Cheddar cheese
2 tbsp. milk
2 large eggs
2 slices ham
sliced green onions

Make the biscuits by sifting the flour into a bowl along with the baking powder and salt. Chop 1 tablespoon butter into small pieces. Using a pasty blender or fork cut this into the flour mixture until it resembles coarse meal. (Some chunks of butter remaining are OK.) Stir in the cheddar cheese and milk to form a soft, sticky dough.

On a floured surface, pat the dough out into a 6-inch square and cut out 4 rounds with a 2 3/4 inch round cutter dipped in flour. Stack 2 of the rounds on top of 2 of the rounds, pressing them together gently.

Bake on a buttered sheet in a preheated 425 degree oven for 15 minutes, or until biscuits are a light golden brown.

While biscuits are baking, melt the remaining butter in a large skillet over medium heat. Swirl the skillet and gently slide in the eggs. Cook the eggs, basting carefully, just until set.

Halve the biscuits horizontally and arrange a folded ham slice on each lower half. Top with a fried egg and drizzle with remaining butter and sliced scallion.

Top with upper biscuit halves and serve while hot.
