HAM-FILLED ANGEL BISCUITS
4 1/2 c. all-purpose flour
1 tbsp. sugar
1 tsp. baking soda
1 tbsp. baking powder
1 1/2 tsp. salt
1 c. shortening
2 pkgs. dry yeast
1/4 c. warm water
2 c. buttermilk
Melted butter
Sliced ham

Combine first 5 ingredients, mix well; cut in shortening. Dissolve yeast in water. Add yeast mixture and buttermilk to flour mixture, mixing well. Turn dough out on a floured surface and knead until smooth and elastic, about 8-10 minutes. Roll dough to 1/4 inch thickness and brush with melted butter.

Cut with a 2-inch biscuit cutter and place 1/2 inch apart on greased baking sheet. Top each with a second biscuit. Bake at 400 degrees for 12-15 minutes. Fill with sliced ham. Yield: 3 dozen.

NOTE: Dough may be refrigerated up to 1 week before rolling out.
