BUTTERMILK HAM BISCUITS 
1 1/2 c. lightly spooned all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. dry mustard
1/8 tsp. salt
4 oz. peppered ham luncheon meat, finely chopped
7 tbsp. butter, melted, cooled
3/4 c. buttermilk

Preheat oven to very hot, 450 degrees. Combine flour, baking powder, baking soda, mustard, salt and ham in a medium-size bowl. Stir in 4 tbsp. of the melted butter and the buttermilk with a fork until the dough is moistened and clings together. Knead the dough on lightly floured surface 8-10 times. Roll out dough to a 1/2 inch thickness. Cut with a 2 inch floured biscuit cutter. Place on ungreased cookie sheet, one inch apart.

Bake in very hot 450 degree oven for 10 minutes or until biscuits are well-risen and golden brown. Remove from oven to wire rack, brush tops with remaining melted butter.
