RED HOT CUCUMBER RINGS | |
7 lbs. peeled & seeded lg. cucumbers, sliced 1/4 inch thick (yellow ones are fine) 1 c. lime 1 c. white vinegar 1 fluid oz. red or green food coloring 3 c. white vinegar 8 cinnamon sticks 10 c. sugar (5 lbs.) 1 pkg. (6 oz.) red hots cinnamon hearts 1 tsp. alum Soak cucumbers in 1 cup lime and 1 gallon water for 24 hours. Stir occasionally, after 24 hours wash and let stand in ice water for 3 hours. Drain. Mix 1 cup white vinegar, food coloring and 1 teaspoon alum with enough water to cover cucumber rings, simmer on stove for 2 hours. Pour off liquid. Boil 3 cups vinegar, 2 cups water, 5 pounds sugar, cinnamon sticks and red hearts. Pour over cucumbers. Let stand 24 hours. Bring to boil and pack in jars. Cover with liquid and seal jars. Chill before eating. |
