RED HOT CUCUMBER RINGS | |
2 gallons cucumbers 2 c. lime 4 1/2 c. vinegar 1 sm. bottle red food coloring 11 c. sugar 2 sm. bags red hots 8 cinnamon sticks 1 tbsp. alum Jars & seals Peel cucumbers, slice 1/2" thick, removing seeds. Combine lime with 8 1/2 quarts water. Pour over rings. Let stand 24 hours; drain. Wash 3 to 4 times until water is clear. Soak rings in ice water 3 hours. Mix 1 cup vinegar with 1 small bottle red food coloring and alum; simmer. Add rings, simmer 2 hours. Drain off solution and throw away. Mix 3 1/2 cups water, 3 1/2 cups vinegar, 10 cups sugar, red hots and cinnamon sticks. Boil. Pour over rings. Let stand 24 hours. Drain off syrup. Add 1 cup sugar. Boil and pour over rings. Let stand 24 hours. Bring to a boil; put in jars and seal. |
