SPICY RED HOT CINNAMON CUCUMBER
RINGS
 
2 gal. cucumbers
2 c. lime mixed with 3 1/2 qt. water
1 c. vinegar
1 sm. bottle red food coloring
1 tsp. alum
2 c. vinegar
3 c. water
10 c. sugar
8 broken sticks cinnamon
6 oz. pkg. Red Hot candy

Peel and slice cucumbers. Clean out center. Mix lime and water and pour over rings; soak 24 hours. Drain and rinse. Simmer in a mixture of 1 cup vinegar, red food coloring, alum and enough water to cover for 2 hours. Drain and place in large container. Make a syrup of 2 cups vinegar, 3 cups water, sugar, cinnamon and candy. Bring to boil and pour over cucumbers. Let stand overnight. Next day: Drain off syrup and pack rings in sterile jars. Reheat syrup to boiling. Pour over cucumber rings and seal at once.
