AUNT GLORIA'S FRESH CHERRY PIE 
4 to 5 c. fresh or frozen pitted tart cherries
1 c. sugar
3 tbsp. tapioca
1/4 tsp. almond extract
Drop or two red food coloring
Pie dough

In a bowl, combine tapioca and sugar. Stir in cherries and let sit for at least 15 minutes. Add almond extract and food coloring, mix well and pour into an unbaked pie shell. Cover with top crust and bake at 400 degrees for 25 to 30 minutes.
