JENNY SHORT'S ORIGINAL MEATBALLS 
3/4 lb. ground beef
1/4 lb. pork sausage
1 tsp. salt
1/8 tsp. pepper
2-4 tbsp. finely chopped onion
1/8 tsp. garlic powder
Pinch of rosemary
Pinch of thyme
1 med. apple, diced
1 tbsp. butter
1 egg
1 tsp. horseradish
1/2 c. bread crumbs
1/4 c. water
1/4 c. dry red wine
1 c. canned undiluted consomme

Saute onion, garlic and apple in butter. Mix beef, sausage, salt, pepper, thyme, rosemary, onion-apple mixture, egg, horseradish, bread crumbs, water and wine together thoroughly. Shape into 1 inch balls. Roll in flour and brown in skillet. Add consomme. Cover and simmer on low for 45 minutes. Serve with rice.
