CORNBREAD SALAD 
1 pkg. cornbread mix
1 egg
1/3 c. milk
1 c. mayonnaise
1/4 c. sweet pickle juice
4 med. tomatoes, peeled & chopped
1 green pepper, chopped
1 med. onion, chopped
1/2 c. chopped sweet pickles
9 slices bacon, cooked dry, crumbled

Combine cornbread mix, egg, milk and stir well. Spoon into greased 8" pan. Bake at 400 degrees for 15 to 20 minutes. Cool, crumble and set aside.

Combine tomatoes, pepper, onion, pickles, bacon. Toss gently and set aside.

Combine mayonnaise and pickle juice. Stir well and set aside.

Layer 1/2 each cornbread, vegetables, mayonnaise in large glass bowl. Repeat. Cover. Chill 2 hours.
