PEPPER STEAK WITH RICE 
1 lb. round steak
2 tbsp. butter
1 1/2 c. beef broth
1 c. bell pepper strips
1/4 c. water
2 tomatoes, cut in eighths
1 tbsp. paprika
2 cloves garlic, minced
1 c. sliced green onion
2 tbsp. cornstarch
1/4 c. soy sauce

Cut steak in strips. Sprinkle with paprika. Let stand a while. Brown meat in butter. Add garlic and broth. Cover and simmer for 30 minutes. Stir in onion and pepper. Cover and cook 5 minutes longer.

Blend together cornstarch, water and soy sauce. Stir into meat mixture. Cook stirring until clear and thick about 2 minutes. Add tomatoes and stir gently. Serve immediately over rice.
