PEPPER AND ONION STEAK WITH RICE 
Flour
2 or 3 lbs. cubed steak
1 med. onion, chopped
1 sm. bell pepper, chopped
Crisco shortening
1 can tomatoes
Salt and pepper

Season steak with salt and pepper. Coat each piece of steak with flour. Place in hot shortening in skillet. Add chopped onions and pepper around steak. Cook over medium heat, turning steaks until browned and tender. Remove steaks, peppers and onions from skillet. Add one can tomatoes to drippings in skillet. Stir until heated thoroughly. Return steaks, onions and peppers to tomato mixture. Simmer and stir until sauce thickens. Serve over hot rice.
