BUTTERMILK-CUCUMBER DRESSING 
1/4 c. buttermilk
2 1/4 tbsp. low-fat cottage cheese
1 1/2 tbsp. lemon juice
1 tsp. dill weed or 1 tbsp. chopped fresh dill
1 clove garlic, minced
Pepper to taste
1/2 cucumber, peeled and diced
1/3 c. diced red bell pepper

Mix together buttermilk, cottage cheese, lemon juice, dill, garlic, and pepper. Stir in cucumber and red pepper. Chill. Makes about 3/4 cup.
