GINGER AND ONION CHICKEN 
1 chicken; cut up
1 tsp. salt
1/4 tsp. pepper
1/4 c. flour
1/4 to 1/2 c. oil
2 to 3 lg. onion, cut
1/4 c. ginger; grated or minced
2 tbsp. soy sauce
2 tbsp. sugar
2 tsp. cornstarch

Deboned chicken cut up small works best. Season chicken with salt and pepper. Dust with flour. Fry chicken until nearly done. Remove chicken from oil and saute ginger and onion. Stir in soy sauce, sugar and cornstarch dispersed in water. Bring to boil. Return chicken, add 1 to 2 cups of water. Cover tightly and simmer until chicken is tender. Serve with rice.
