CHICKEN WITH PEPPERS AND ONIONS 
1 lg. onion, sliced
2 green peppers, sliced
1/4 c. butter
2 lg. potatoes
4 chicken breast halves, skinned and boned
1/4 c. chicken broth
Pinch of sweet basil

In a large skillet, saute onion and green pepper in butter until tender, 7-10 minutes. Peel potatoes and slice into thin circles and put circles on top of onion-pepper mixture. Salt and pepper generously.

Place breasts on top of potato and pour broth over. Add more salt and pepper, along with pinch of basil. Cover and simmer until chicken is done, about 15-20 minutes. Serves 4.
