MOIST 'N CRISPY ONION CHICKEN 
1 env. Lipton onion recipe soup mix
3/4 c. fine dry bread crumbs
2 1/2 - 3 1/2 lb. broiler fryer chicken, cut into parts
1/2 c. mayonnaise or salad dressing

Place onion soup mix and bread crumbs in large plastic food bag and shake to blend. Brush chicken on all sides with mayonnaise. Place chicken in bag one piece at a time and shake until thoroughly coated. Place chicken on rack in a broiler pan. Bake in oven at 400 degrees for 40 to 45 minutes or until golden brown and tender. Serves 4.

Instead of mayo, I substituted Wishbone light peppercorn parmesan salad dressing. I also used seasoned breadcrumbs. This recipe is easy and sooo delicious. Since it is cooked at a high temp, this may help to keep the chicken moist and full of flavor, instead of dry and tasteless. It will be my go to chicken recipe from now on. By the way, this would be great for tail gate parties since it is also good served cold.
