BAKED CAULIFLOWER 
1 head cauliflower broken into flowerettes
2 tbsp. butter
2 tbsp. flour
1 cup milk
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. chopped pimento
1/2 cup chopped green onions
1/2 cup buttered bread crumbs
1/2 cup grated cheese

Cook cauliflower in boiling salted water until done but not too soft. Drain and place in a baking dish. Melt butter; add flour and stir until blended. Add milk and continue stirring. Add seasonings, green onions and pimento. Pour over cauliflower. Top with bread crumbs and cheese.

Bake at 375°F for about 20 minutes.

Serves 4 to 6.
