BAKED CAULIFLOWER 
1 medium head cauliflower
1/4 c. butter
1/4 c. diced green pepper
1/4 c. flour
1/2 tsp. salt
1 can mushroom pieces
Pimento cheese slices
2 c. milk

Cook cauliflower 10 minutes and drain. Sauté green pepper in butter until tender. Add flour and stir in milk. Cook until thickened. Add salt and dash of pepper and mushrooms. Place cauliflower in casserole dish, cover with cheese slices then in 350°F oven.

Can be made ahead of time and refrigerated. When ready to bake, add a few minutes of time.
