SPINACH BLUE CHEESE SALAD 
1 lb. fresh spinach, torn
5 water chestnuts, sliced
Blue cheese dressing
1 hard boiled egg, chopped
1/4 lb. fresh mushrooms, sliced
1 (2 oz.) jar sliced pimiento, drained

Combine spinach, egg, water chestnuts, mushrooms and pimiento in a large bowl, toss. Serve with blue cheese dressing (see next recipe). Yield: 6 servings - 1 serving = 42 calories and 19 calories per tablespoon dressing.
