CHESAPEAKE BARBECUED DUCK | |
1/2 lb. butter 1/2 c. catsup 1 tbsp. sugar 1 1/2 tbsp. lemon juice 1 tbsp. Worcestershire sauce Fresh ground pepper to taste 1 tsp. salt 1 clove garlic, pressed 1 sm. onion, chopped 1/2 tsp. Tabasco sauce 1. Depending on the size of duck - allow 1/2 to 1/4 duck per person. Split whole ducks in halves and flatten with the side of a meat cleaver. 2. Combine all the ingredients to make the barbecue sauce in a saucepan. Cover and simmer 5 minutes. Bake the duck in a flat pan at 375 degrees about 1 hour basting the sauce every 10 minutes. 3. Turn and cook duck on the other side another hour still basting it every 10 minutes. This timing is for if you want the duck well done. You can adjust the cooking time to suit your taste. |
