COFFEE CAKE 
1 1/2 c. flour
2 1/2 tsp. low sodium baking powder
1/2 tsp. salt (optional)
1/2 c. sugar
1 egg white
1/4 c. corn oil butter, melted
3/4 c. skim milk

TOPPING:

1/2 c. brown sugar
1/2 c. chopped pecans
2 tbsp. flour
2 tbsp. soft corn oil butter
2 tsp. cinnamon

Blend flour, baking powder, salt, and sugar. Mix thoroughly the egg white, butter, and milk. Add to dry ingredients. Stir until flour is moistened. Combine Topping ingredients. Spread half of batter in 9 inch greased pan. Sprinkle half of topping over batter; add remaining batter and sprinkle with rest of topping. Bake at 350 degrees about 20-25 minutes or until brown and toothpick comes out clean.
